What is the difference between the two?

I have never used Gumtex so am really not sure. There is also Tylose powder, Gum Arabic, and Gelatin used in different recipes for gumpaste. My understanding is they are all a gum source or thickening agent. I use Tylose and Gum Tragacanth interchangably in Rosemary Watson's gumpaste recipe, Tylose in Nicholas Lodge's and Gum Arabic in making gum glue. That doesn't really answer your question but it's the best I can come up with in comparing them.

Third paragraph down has a little explanation. I think it's like using vegetable oil instead of corn oil...in a lot of things it won't matter.

Thank you - so do you think if a recipe calls for Gum Tragacanth I can use gum tex in place? Where I live that is all I can get without ording over the internet.
