I think the true Cannoli recipe is made with Ricotta cheese but I have made them with this Bavarian cream recipe and they are really delicious.
If you aren't able to buy Pastry Pride in your area you could probably substitute Rich's Bettercream, although I have never tried it, or a whipped cream.

CANNOLI FILLING
1 pound ricotta
1/2 cup sugar
1/4 cup chopped chocolate
1/4 cup chopped pistchios

Mix ricotta and sugar. Fill the shells and dip the ends in the chocolate and nuts.
