What do you think of either chocolate chip pound or marble for the cake, with a fruit filling (preferably pear, but anything but apples with cinnamon is fine). You pick the exterior since I know that matters for a sculpted cake.
I don't know of any pear or apple filling...and would it go with the cakes she is interested in? Please help!

I think she just wants pear...I read her email wrong. I think she said anything BUT apple with cinnamon. Ugh..I made the marble cake last night. Am experimenting with pear preserves. Does not sound good to me at all.

She said raspberry would be fine with her...what do you think of a raspberry buttercream? Would that go with the marble?
I really just want to do a choc buttercream or choc. ganache. Ugh...I hate this part. I just love it when they tell me to do whatever I want.

I know around here (Va) they sell fruit 'fillings' that are meant for baking. They're in the baking aisle - but they're not the canned pie fillings - they're like, poppyseed, almond, raspberry. I haven't used them, because I haven't needed anything that 'gourmet' and for the fruit flavors I use jam....

hmmmmm, raspberry. Gee, I'm just not feeling it. I just can't imagine the raspberry with the marble. Who knows it may be absolutely wonderful but I just can't see it together. Sorry, I know I'm no help. I do agree that a chocolate mousse would be wonderful. But then, that's not a fruit filling.
you could try an orange/apricot filling.It would blend well with marble.
