I have a couple of questions to all you expert people: What works best when it comes to putting the stick on the cookies for bouquets? Glue it with royal icing or putting it on the raw dough and baking the cookies?
Several years ago I tried to make what we called lollipop cookies and sold them individually not as bouquets; but the cookies just broke at the middle where they had the stick. I used the wilton's recipe, but baked with the stick. Of course I read that the stick wilton sold was not for baking, and I used wood skewers instead. Another drawback is the space the stick takes up in the baking sheet. Now that I want to try it again, I'd like your input as to the best method. My husband doubts that the icing will hold the sitck in place, (well me too). So any comments will be greatly appreciated. SOL
I always bake the cookie with the stick. Yes, it takes up more space, which increases your baking time. But you save time by not having to either insert the stick right away when the cookies come out of the oven, or gluing one on later. I've never had a cookie fall off, and I even dropped one once and it stayed put!
I use the Wilton cookie sticks. A lot of people like the popsicle sticks, but they aren't really all that long. (Unless I'm clueless, which is possible!) I've thought about using the Wilton lollipop sticks, which aren't as thick, but I know what I'm dealing with when I use the cookie sticks. I don't like surprises when it comes to baking.

GeminiRJ , you say you have never had one to fall off? How do you do yours? I have only started in past 2 weeks and I have had a few to fall off. How can I avoid this?
