I have an order for a 50th Anniversary display cake. They want a 3 tiered "dummy" cake. I am doing a version of the "Dramatic Draping" cake from the "Wilton Wedding Cakes, A Romantic Portfolio." I was planning on using mmf and was wondering how long the mmf would last without cracking or if I should use the regular fondant. Any suggestions would be greatly appreciated. Thanks in advance.

First of all, question : How long does Sugar and Marshmallow last in your pantry ? Because thats' how long MMF Fondant lasts. FOndant does not crack unless you put weight on it once it had dried and set.
And it does not shrink either.
