any ideas on what to charge for mini cakes? should they be considered like a slice of cake (maybe charge what a slice of cake would be) ?

I cater and the "mini" desserts are very popular now. I charge $1.50 to $2.00 per dessert.

I would expect them to be more $ than slices... after all there is a lot more work in a few mini cakes than in one small regular cake!

I would think that the price should also be based on the quanity ordered. If it's a big event maybe sell them for $1.75- $2.50, but if you're only making a handful for a customer I'd charge $3 or $4 a piece. If they are very detailed charge $5.

I just made 2" by 2" mini cakes as seen in my photos. Lots of work. I have seen small cakes ie round 3" sold for $5 all buttercream, though. Depends on what you are decorating with. With the fondant and stamping I would say I would charge minimum of $3.00.

ok, now the story has changed. they are wanting "centerpiece cakes".....42 of them to be exact.

guess i better get to work and start freezing them, only got 4 wks to go.

are you talking about these?? don't charge under $6-10 at LEAST! They are so labour-intensive. Look easy enough, but don't be fooled. They take ages to do!!

originally they wanted mini cakes but they have now changed their minds. they want 8" cakes to use as the "centerpieces".

I just got an order, well she'll be signing contract soon, for 100 mini heart cakes covered in fondant, with their initials on them...I'm charging $5 each, and that is for the simple design. I'll be covering cakes for a while!
I'll probably have to hire a young friend to help me...

Your cakes are absolutely gorgeous! Love your work! : ) You're going to be so tired of covering those little hearts with fondant, but bet they look great when you're done. : )

I have a young and eager friend who is willing to learn...I'll teach her in exchange for servitude icon_lol.gif
I plan to roll out the discs using my pasta machine...I'll probably get a 4 o 5" round cutter to cut the fondant discs...
here is a picture of some I made to show her how they would look...However she want's monograms...I'm thinking I can probably make those monograms ahead of time in Royal Icing or the Sugarveil icing...

^%$#@!!! Again I forgot to acknowledge the baker. NOT my cakes in that photo. They are from the staff at Graydon Hall Manor in Toronto.

The discs they are on are dried fondant or gumpaste, cut with a scalloped round cutter.

A friend of mine uses upside-down Digestive cookies for the bases!

I like the look of Vanilla or Chocolate No-Fail Cookies too.
