I tried to save myself a little bit of money while making my son's Wedding cake so I made MMF. Everything went great while I was making it and it looked flawless. I started thinking this was what I was going to start doing with all my cakes that require fondant. UNTIL.... I had to use it! Two days after I made it I opened it up and began to knead it and the texture was horrible. It was nothing like the very pliable texture of Wilton Fondant. No matter how much I kneaded it the texture wouldn't change. I even tried adding a bit of Crisco to it and that didn't even help. So..... at 12:30 last night I had to get dressed and go to WalMart to buy some fondant. I was so disappointed that I couldn't use the MMF.

I heat mine up in the microwave for a few seconds at a time. Seems to really help so I can kneed it.

Yeah, really, heating it up with a little bit of crisco makes all the world of difference when kneading it after it sits for a couple days or longer. It really isn't a 4-letter word! Ya gotta give it another shot!

Well I still have some left over. Maybe I'll give it another try. I just didn't want to mess up my Son's Wedding Cake. I'll try it again on a different cake. But for now MMF stands for something other than Marshmallow Fondant! LOL

I ALWAYS heat it before using it. Just a few seconds. No ore than 10 or 12. I tend to knead a lot of Crisco into it, too, while it's still warm. Stays nice and soft and has a pretty sheen.

Lazy Susan -- I agree with all the others, warming MMF in the microwave for a few seconds is absolutely required. It takes a little while to get the hang of it, but it is so worth it. All my wedding cakes that I've done have been with MMF, and they weren't ruined icon_smile.gif. In fact, I've never bought any commercial fondant since my Wilton 3 class. icon_smile.gif

Well I've never used Wiltons fondant or any other commercial fondant. I make MMF and it's really not that difficult, honestly. If you store it then it absolutely has to be heated in the microwave. I love the stuff and I'll never buy Wiltons because I've read too many negatives about it here.
