I have been using large eggs in my mixes and just wanted to know if I can use the small or medium?

On the box it calls for 3 eggs...no size stated.

Having a great sale on medium eggs this week and wanted to know before I brought them.

Also, if you have a Fresh Pride store in your area, butter is on sale, 2 boxes for $4.00.

TIA

I've used medium eggs many times before. They're a bit smaller but I really noticed no difference in my cakes when I used them.

Maybe others can offer some input on this also icon_smile.gif

Wow! Cheap butter. I wish we had one of those stores close to where I live!

If a recipe doesn't state the egg size, you should assume they mean "large".

If I only have jumbo eggs, I'll use 20-25% less eggs in my recipe...so 7 or 8 eggs instead of 10 from a recipe.

Based on info from The Cake Bible, the Hormel Foods website and a couple of other sources, I made the following chart.

I'd use 4 medium.

I too would use 4 medium instead of 3 large.
