what are your most popular fillings and cake flavors.
Trying to expand may wedding cakes and I am starting to get brides that are asking for flavor options.
It seems that the bridal mags and webs this year are going for flavor as well as looks.

chocolate mocha cake w/ whipped milk chocolate ganache....

carrot cake with whipped cream/cream cheese frosting

lemon cream cheese pound cake with fresh raspberry or strawberry puree

white almond sour cream cake with fresh peach puree.

Vanilla Almond Sour Cream with Raspberry Preserves
Milk Chocolate with Milk Chocolate Butter Cream and Raspberry Preserves
Lemon Cake with Lemon Butter Cream with Grated Lemon Zest

Right now, these are my biggest flavors going for weddings. Looking forward to everyone elses combos for other options that I can offer. Great thread!

Lots of white chocolate...here are some of my most requested flavors for this year

White chocolate whisper cake with whipped white chocolate ganache

White chocolate raspberry almond (almond genoise filled with raspberry soaking syrup, raspberry preserves and whipped white chocolate ganached)

White chocolate eggnog mousse cake

Vanilla caramel cake with caramel espresso filling

Chocolate cake filled with espresso meringue and kahlua mousse

Red velvet with cream cheese

Black forest: Chocolate cake with cherries and stabilized whipped cream

...please don't ask me to post recipes, no time, but most are in the Cake Book icon_wink.gif

Plain 'ole white cake with raspberry filling, followed by white cake with choc fudge filling. I would be sure to have some "basic" flavors among all of the "fancy" flavors. Some couples like to have a flavor that is different and unusual...... some like the traditional and regular.
