Oh my!!!
I just got a called from the French Pastry chef. He decided that he doesn't want to wait a few years to take me into apprenticeship, I'm starting on Monday!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! I'm starting at 9$/per hour, and if everything goes well I'll get to 10$ in a few weeks. They want to give me around 15$ after awhile..... ![]()
He wants me to be in charge after a few years and have sous-chefs working for me!!!!
I'll work part-time for now, because I still have to make my things for them, from my home. But after awhile he wants us to be partners, and eventually (sp?) sell me the bakery. They don't have kids here to take the business, they want me and my family to take over after they retire!

What an amazing opportunity. How did you land a gig like that? I need to find one of those where I live. haha
I agree with the post earlier about the Birkenstocks. I know they have like many to choose from, but I dont know if any are good for baking. I spent $120 on my Birkenstocks and I wouldnt bake in them because they are suede. Now, another option for you would be Merrill's, now these are great and they come in material other than suede, And lastly, Crocs are also great, thats what I normally wear. They come in a rainbow of colors and if they get dirty you can just throw them in the sink and wash em off with some soap and water. Enough with the shoes . . .

I still need to shop around for my shoes... There's not a lot of stores around here for this, and don't have time to shop online... But maybe I'll buy a pair of shoes that kinda do the trick, and after that try to find a good pair online. Anyone knows great website to shop from?
Can you believe I'm making my own schedule for work? I know I'm starting on Monday, but I have to call them tomorrow to tell them at what time I'm going in! They said they want to work like in France, there everything is to please the employee. I'm not use to that, I'll work my schedule in advance because I'm not the one to take advantage of people... I hope I'll be a good apprentice!

Pootchi, I have taken the liberty of finding some shoes for you, I dont think you could go wrong with any of the shoes on the page. They look good with anything and they are made for comfort. Im not sure of what is availiable in Canada, but we have a store here called Martins and they had this buy one get one half off special that they run from time to time and I bought a pair of Clarks and a pair of Merrell's for 140. Anyway . . . .

Personally, they suede Birkenstocks and Merrells look the best, but if you get them wet then its all over. Birkenstocks have a cork footbed and it molds to your foot as you wear it. Thats what make them so unique and so comfortable.
Ok, they called me and I'll start only on Thursday. They don't really have time to show me things before that. Well that's great, I'll have more time to shop for working clothes. I need to be comfy
And I'll bake a few things in advance for Saturday. I have 6 flavors of cake balls to make. I already baked 4 cakes just for that, they're in the fridge right now. I'll bake more 8" cakes (that's what I'm going to sell them, so they have cakes at the bakery) So more time to receive my supplies orders too!
But it makes me more nervous though.....
Ok, yesterday I went and spent some time with them at the bakery, talking about the prices (they're not used to $) explain about taxes, and I wanted my doughnuts to be approved. After 2 weeks of trial and error I finally found a good way to make them taste great and not too oily. You want to know the trick? They're baked not fried! Yes baked! They're moist and delicious, with less fat! They said they're going to sell it as the almost healthy doughnut
Oh and I don't have to glaze them, they'll do it there. One less thing to think and do....
We talked about the shoes too. He swears by Crocs! They're less expensive, and this I can find locally... So I'll be able to actually try them on and make sure they fit! Thanks again for all the suggestions, I kept them anyway so if Crocs don't do good for me, I'll know where to look for other shoes ![]()
I'm starting AT the bakery for my apprenticeship on Thursday, I just can't wait!!! I'll learn how to make fresh French bread, after that French pastries. And he said that when summer arrives we'll do icecream pastries. OH!!! I'll have to be careful if I want to still lose weight!!!!!!!
I'm beginning my baking today for my cakes and cookies. The inauguration(sp?) is Friday evening, and I'll probably work there in the afternoon. He looked at what I'm going to do for them, and he said that everything is freezable for a few days. So he actually told me to start now, well pack them in airtight containers and everything will be fine. So I'll start baking now! Fisrt I have many 8" cakes to bake, then I'll start on cookies!![]()
