I made MMF for the 1st time on sunday (along with the white almond sour cream cake and it got RAVE reviews) so the fondant tasted sooooooo much better than the wilton stuff, but I had some trouble, well ok, alot of trouble making it...
I started with a wisk and it ended up stuck in the middle of the wisk, so then I switched to a silicone spatula and the spatula part actually came off the handle, so then I used my hands and the mess was INSANE. I eventually incorporated the powdered sugar and got it to a non sticky consistency, but not before I was sweating, covered in white dust, and up to my wrists in sticky gooey mess. Is there an easier way to do this? Someone please help, I dunno if that work is worth the fact that it tastes better, especially since most people still peel it off!
It is a sticky mess but it should not have been that bad. Next time use a wooden spoon for mixing, that should help. The first time you make anything new it is a trial and error process. Next time will be easier, I am sure.
Do you have a stand mixer? I do all my MMF in my Kitchen Aid. I use the paddle for about the first 1/2 and then switch to the dough hook when adding the last 1/2 of sugar. Also, be sure to grease everything - the bowl, the spatula, the dough hook. That'll keep it from getting too sticky.
Oh, Dear. The easiest way to make MMF is to coat everything with crisco. On the work surface, first coat it with crisco, then put a mound of sifted powdered sugar on it, make a hole in it, then pour the melted marshmellows into the hole (I never make the hole deep enough so it runs down the sides), then sift some more ps onto the marshmellows (I wear gloves coated with crisco), coat your hands and start turning the sugar and marshmellows over to mix, keep coating your hands until the MMF starts to feel smooth and elastic. It's a lot like kneading bread. I know people that do eat it, but most peel it off. It's still the most wonderful surface to work with. Try again, next time it will be much easier to make.
