Gum Tex Question

Can I add Gum Tex to MMF to give it a better consistency for modelling figures etc? If so, how much do I add?

yes you can add it. I've found that MMF is just too soft even with gum-tex for modeling, so I just use regular Wilton fondant (its cheap with the coupon, plus no one really eats it because it's icky) and you can either put some gum-tex in there or like me, I mix it with gumpaste.
