Chocolate Cake Mix Help!!!!!!

I need a chocolate cake mix extender recipe. Or just a good recipe to doctor up a chocolate cake mix that has no more than three eggs. My Dad is allergic to eggs so I don't dare put more than three eggs in his cakes. I found one cake mix extender recipe on here but it calls for four eggg. I tried it anyway and the flavor was a bit bland, not chocolatey enough. So I tried a practice cake by adding a few things to it and it came out just okay. The cupcakes were flat, the cake not much better. It tasted good but that's not good enough. Can anyone help me with this? Thanks! Anna31 icon_confused.gif

Try the Darn Good Chocolate cake. The recipe calls for four eggs, but you can make it with three. It is absolutely delicious!!

hmmm.........I have a good eggless chocolate cake recipe from scratch....but no extender ideas....

To Shelbur10, do the chocolate chips completely melt or are there chips in the finished cake?

I also recommend the Dard Good Chocolate Cake. This is the only one I use now. It is so moist. I don't use the chocolate chips.

I think I answered my own question as I read through the recipe a little more. If I use the mini chips, they will melt. Thanks for pointing out the recipe to me! Guess I missed that one! Also, thanks to Mkerton. Appreciate your help to. I will have to make another practice cake. I am going to get so fat! I am starting to get tired of my own cakes! I didn't think that would ever happen. After three years of doing this, I can always down a piece of cake. Not lately though. Have been trying new things trying to expand my horizons. I'm also expanding my waist line! GRRRR! Anna31

Wow! Thanks kitkatkit! Maybe I will just take your word for it, yours and shelbur10 and not bother making a practice one. If you only use that recipe, it has to be good! Anna31

Have you considered the Miracle Whip chocolate cake. It is a very easy scratch recipe, that uses no eggs- except that which is in the Miracle Whip. It is a dense, moist, dark chocolate cake.

Anna, I have made it with and without the chocolate chips, and I really prefer it without. But, I used the regular chips and they didn't melt. It is the only chocolate mix I use and I've never had any problems with it!

No, I haven't considered the Miracle whip cake. I have never heard of it! Sounds yummy and might be good to make just for my Dad's cakes. Is it in the recipes section? Sounds like the Darn good chocolate cake is a winner to! I will probably leave out the chocolate chips though. Thanks to everyone for your comments! Anna31

Anna- I PM-ed the recipe to you because I don't think it is listed here. The recipe is pretty much what I call a 'no-brainer", strictly a measure and mix type of thing
