Help With Wedding Cake Design

I have a request for a Pineapple Upside-down sheet cake for a wedding. It's second marriage for both and they dont want a traditional tiered cake. Do you have any ideas how to make a pineapple upside-down cake look like a wedding cake? It would be neat if I could some how make the pineapple rings look like those wedding ring quilt patterns.

Why not stack the cake just like a wedding cake, using somekind of filling, i'm thinking a whipped icing for the filling.

Then placing a few flowers on. I think it could be a very interesting and pretty cake.

What about having a monogram of their initals in either pineapple or the cherries?

interesting ideas.........I still think using the pineapple rings to make the wedding ring quilt pattern would be cool.....

Check out the applesauce cake- towards the bottom of the page. While it is tiered, without the the frosting- you could use a stabilized whipped cream between the layers- it doesn't look like the average wedding cake. Use fresh flowers rather than carmel dipped apples for the decorations. This might give them a "wedding cake" without the usual fru-fru look of buttercream or fondant.

I like the monogram idea. I like the look of the whipped cream filling but how would I tort a pineapple upside-down cake?

I would definitely have a discussion with the bride about whether or not she wants you to add filling or icing to the pineapple upside down cakes. Personally, I think pineapple upside down cake is gorgeous on its own and adding filling or icing to it would detract from the way it's supposed to be.

This is just brainstorming here, but if it were my bride, I'd go to her with the idea of doing 3 or maybe 4 individual pineapple upside down cakes (you could bake these in square or round pans) displayed on separate cakestands or pedestals of varying heights and then the two of you discuss the table display from there. Maybe incorporate a few of her flowers and/or greenery on the table. I wouldn't go crazy with the flowers, just enough for an accent. Think less is more. I like the idea of a monogram, but again- I would keep it simple and place it on just 1 of the cakes.

If you need to feed a lot of people, you can do the rest of the cakes as "kitchen cakes" ie sheet cakes that will not be displayed on the cake table but just cut up and served.

If you don't have individual cakestands, then try doing a forums search for cake displays. I've seen some inexpensive and creative ideas floating around.

thanks snowboarder...I really like your idea of having individual smaller cakes on cake stands. Sam's Club bakery actually sells a sturdy styrofoam 3 tier stand for less than $20, you drape it with fabric/tuile to hide the styro and place the cakes on top...that is what I'll suggest. Thanks again!

what about instead of A cake....

individual serving size cakes -- each could have a monogram on top.

nordicware make a pan that bakes these size and I just wonder if you couldn't make them in one of those "TEXAS" size muffin pans too.
