Uh, yeah we do! It's more accurate that way- I ALWAYS weigh all my ingredients, including the liquid ones!

arr, so some bakeries do weigh it, i'll be darned. the reason i said that was the bakery i have worked at has a measuring jug that says 1lb and 2lb on it that they use for water or liguid ingredients, and i just wasn't sure if it was the same as 2 cups or not.
Water is what ounces weight = ounces volume is based on. 16 ounces of water by weight is the same as 16 ounces of water by volume.
