I have a question regarding the freezing part of the petit fours before you decorate them.
When you freeze them to make them easier to cut and frost and get less crumbs, do you put them immediately back on the fridge to defrost?
I wonder because the way to defrost cakes, as I was taught, is to take them from freezer to fridge, leave overnight and then take out to reach room temp.
When you freeze the petit fours, doesn't it affect the texture of the cake or go stale when you take them out directly from the freezer to room temp?

I put a thinned coat of icing on mine, freeze it then when I'm ready to pour my poured fondant over them, I take it out of the freezer, cut it, then pour my icing over each .. I don't freeze again after I've completed them... I put my cakes on my cake board (I have cakeboards covered with clear contact paper that I can use over and over), put a thinned icing over it, put it in a box and then the box in a garbage bag (unscented) then freeze... cakes will keep like this for about 3 months and still taste just as fresh ![]()

Do you mean a thinned coat on poured fondant icing, or a thin layer of bc or royal?

I tried making petits fours a while ago and they were torturous. I used the little metal molds (tedious! will use cutters next time) and could not for the life of me get them smooth. The poured findant just did not want to be smooth for some reason. The ones I did with ganache turned out somehow OK, but they just weren't what I had envisioned. Maybe its because I didn't cover them with a thin layer of icing first?
I want to try them again sometime.

I am going to try them again, though. I made them in a hurry and that was a huge mistake. You cannot rush when making petit fours...
I think they are cute and lovely to serve at home when you have guests.
I don't I will EVER make them to sell. Too much work!!!
