I see there are a million recipes for carrot cake and none of them seem alike! I was wondering if anyone had a particular carrot cake recipe they can recommend that is dense enough to be made into a layer cake (with the traditional cream cheese frosting). I need one that is moist and dense. Any suggestions? Thanks!!!!

I really like flaverdfun's recipe on this site! It is made with baby food applesauce and carrots. You get tons of flavor and none of the texture. It is very dense and moist. I made it for a party and it got lots of compliments. I used the crusted cream cheese icing from here with it.

I get rave reviews when I have made the cake mix doctor carrot cake. It sounds like what you are looking for. I use the crusting cream cheese recipe from here and then add toasted pecans to it to make a filling. If you would like the recipe let me know!! icon_smile.gif

Carrot Cake

2 cups flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
4 eggs
1 cup oil
3 cups of shredded carrots (not preshredded they r too thick shred your own)
1 tablespoon vanilla
8 ounces of CRUSHED pineapple plus 3 table spoons of juice
1 cup crushed walnuts
Preheat oven to 350
sift and mix all dry ingredients together. Add eggs one at a time add oil. it will be thick. Add carrots once combined add pineapple then walnuts then put in a greased cake pan cook atleast 50-55 mins unless convention then just til toothpick comes out clean.

This is the most dense and moist cake I have ever used and this is what all my customer crave when I do their cakes.

Cream cheese icing you can decorate with
2 sticks butter
1lb Philly brand cream cheese
1/2 cup of shortning
3lbs of 10x sugar
cream all wet together and slowly add sugar, do not beat at hight speed it puts too many air bubbles in it. hope this hwlps.

Forgot to add-I change the CMD recipe just a bit as far as spices. I am also able to torte it with no problems. It turns out very dense and moist.

I agree with cakeinqueen, her recipe is very close to my own, excellent cake!
I've made several wedding cakes with it, and it will stack well.

The recipe sounds very good! Do you notice the pineapple taste? I noticed a lot of carrot cakes have either pineapple or coconut in them.

its not overpowering but you know there is something there that makes it moist and yummy.

Also if you like raisins in your carrot cake you couls add 1 cup
