Ihave chocolate molds that are a little bigger than ones for making caramels or such, and I line them with melted chocolate, then after they set I put a little squirt of buttercream, and a little tiny piece of cake inside, squish it down, and seal the back with chocolate again. Once they set up, I dump them out and deocrate the tops. VERY fast and easy. They come out beautifully.

Kathy Scott carries petit four cutters and molds, as does Carol Webb.
They are not cheap, but they make beautiful little cakes. You fill the molds with melted white or dark chocolate, tip them over on a rack with a pan underneath to catch the drippings, refrigerate till the chocolate shell has set. Pipe in filling of lemon curd, or buttercream or a mixture of both, cut thin sheet cake or jelly roll cake with the cutters, lay a slice of cake into each mold and cover bottom to seal with more melted chocolate, refrigerate till set and pop out of mold. The chocolate is thinned with melted Paramount crystals or Crisco to make it soft enough to bite in to without shattering. I saw kathy Scott's demo this summer at the ICES convention in Tx. It was all the rage, but the molds were REALLY expensive! I got plain round and square ones I from Country Kitchens, and they work great. I just use regular tips to decorate the tops with flowers, leaves, etc.

I bought 2 of the square and 2 of the round, only one shape per mold sheet. I got them after the convention this summer, and didn't see the triangles and all those. The rounds and squares are basic, but easy and I figured there was enough variation with 2 shapes to have fun and not spend a fortune!
I poured a bit of choc into the bottom from a bag with the bottom tip cut off, then used a brush to make sure all the sides were covered. I baked a cake on a cookie sheet to make it really thin, then just used a small round cutter to cut out little pieces of cake. with the little squirt of BC and the cake along with the chocolate, they were really good. I made them for my daughter's birthday tea party, and the kids scarfed them up! ![]()

I just got my new molds from Kathy on Friday. I am really anxious to use them. I think I will try them sometime this week. Someone here on the form made some last week and posted a picture of them. They were gorgeous. I can't remember who it was now though.
