I am doing a daschund cake completely in fondant....I am concerned because the majority will have to be black. I have heard bad things about trying to tint, and we dont' get the same brands as in the US (here in canada)...any advice/hints? I usually just buy the white wilton fondant, but if anyone has a recipe for black fondant, PLEASE let me know.

i used americolor black and wow!!!! so black that it couldn't be more black.
( i made the notes for my last cake) you can buy it from cc if you have time.
Also make the black one day earlier and leave it in the airtight to mature overnight gets even darker.

I always airbrush black, it doesn't stain your hands or the eater's teeth. Also, it's easy to do, saves on wrist strain!
I must whole-heartedly agree with a point made in the post made that tinabee linked to, use an airbrush if at all possible!
I did a black IMBC-covered wedding cake for a goth couple 2 Halloween's back (see my pics), and it took 1.5 4oz bottles of black color, and 2 days to make it black enough! THEN I got the wonderful hint from CCer's here to use an airbrush! Hindsight's 20/20, right?
If you can find an inexpensive airbrush, grab it! It will save you so much time and money in that application alone.

Use Hershey's Special Dark Chocolate and if still necessary (might not be) use Americolor Super Black. One member told me 1/4C of the Hershey's to 1 C marshmallows.

Well I turned MMF black by accident...and I didnt even need to use any colorings!! Anyway I was trying to make chocolate fondant. After I melted the marshmallows I was going to add (this is probably important..) the dutch processed dark cocoa and some powdered sugar. Well I didnt sift the two together (I dont know if that would have made a difference or not) but I added the dark cocoa to the melted marshmallows and it was black! So I thought "okay when I add the sugar it will turn brown"....nope, still black! I cant tell you exactly how much I added, it might have been something like a 1/4 cup to a small batch of fondant and my plan was to remove that amount of powdered sugar from the recipe. Anyway it tasted good and seriously it was black, not dark brown. I even posted a thread about it a couple of weeks ago.
I made the Easy MMF recipe and I added cocoa powder (about 3/4 of a cup) to it and it was great tasting !
This is exactly what I do for chocolate fondant. It tastes really good and gets to black very easily. ![]()
I have tinted my fondant black with no problem. I made the chocolate MMF from recipe here on CC and then tinted it black w/ the wilton black. I did have to use a pretty good bit but it turned out fine. You can look at my photos that I have posted and check out the airplane cake (the runway is black MMF). Good luck!
I don't have an aribrush, but I'm wondering how it's possible that black color that's airbrushed on wouldn't color your mouth or tongue black too?
Because it's only applied to the surface of the fondant, there isn't as much black as if your worked it all the way through, so there's much less staining, and no aftertaste. The airbrush colors are much thinner than gel or paste colors.
If you were to airbrush over chocolate fondant it would taste great and wouldn't take as much color to cover.
I bought a small airbrush from either CK South or Pfeil and Holing for about 125.00. It came with a set of airbrush colors. It is really just a small aquarium pump with plastic tubing and a simple airbrush, so you could probably put one together yourself inexpensively. I don't know if you could make the airbrush color yourself using the gel paste, though.
Thank-you so much! From what I have seen here in town...I cannot buy chocolate fondant-so homemade--here I come! lol. We have very limited suppliers here, and I don't even get americolor--I have to order luster dust from Ontario-
Michael's is what I depend on, and apart from it being very expensive, they don't carry a whole lot.
I will definately try the cocoa... I think finding an airbrush will be just as difficult! Thank-you for all the advice!
