What would be a great filling for a red velvet cake that is iced with cream cheese icing.

I always use cream cheese frosting. That is the typical I think.

I just did a cheese cake mousse in mine tonight! I can't tell you how it taste bc hubby is taking it to work!

Ok, there are several ways to make this but this is how I do mine....
Go to store, juice isle...pick up bottle of 100% juice(pomegranate, blueberry, apple, grape,raspberry, strawberry, whatever you like around the 8 oz size). Take home, put into pan and bring to boil. Add mixture of cornstarch and water, enough to thicken boiled juice. For extra flavor add real fruit when boiling (but if you do this, strain, throw out the cooked fruit, before adding cornstarch mixture).
Then take the cooled thicken mixture and add buttercream frosting. Around 2-3 cups of frosting. It should look a little on the soupy side. Then take a package of Dream whip and mix it in with the mixer. As the Dream whip mixes it will thicken/ fluff up the frosting. Makes a pretty filling along with a good taste. If you happen to get your mixture a little too thick, just add a little water while your mixing the Dream whip in. Can also be frozen.
Sorry, I don't use recipes so cannot be exact on measurements. I just pour what I think I need, but this is ballpark.
