okay, so im making kinda an important cake, and i want to use mmf on it, but its my first time ever! i have a couple questions:

how far does one batch (16 oz mm and 2 lbs ps) go? i am making a 10", 8", 6" cake with 2 layers on each tier. will i need 2 or 3 batches of fondant for it?
does it need to rest over night like regular fondant? i tried to be generous with the BC under regular fondant, should i do the same with mmf? or should i use just a very thin layer? when i roll it out should i put crisco, ps, or cornstarch on the counter?

i think that does it, sorry its a lot of questions, but i really REALLY want this cake to turn out all right and im on a deadline.

thanks

2 batches should do it. I use just a thin later of BC underneath. I use the MMF right away and roll out with Crisco. My suggestion would be to make a small cake to practice on if this is for something important.

I think calvarykari is right: 2 batches should do it. However, I would make 3 just to be safe. Especially since this is new for you.

you can really use it right away? i always thought that you had to let it sit over night...good stuff!

I was told to use it right away and I have done this several times.

My first attempt at MMF this weekend as well, was hard to Kneed. Is that normal? I kept adding crisco to make it softer and I managed to get my cut outs. didnt taste it though.

The recipe I have says let it rest for 1 hour before using.

I've used it both right away (still need to let it cool to room temp. I have put it in the fridge to speed up the process) and over or a couple days later. The difference is that it you will need to rework it quite a bit if you let it sit over night. But 30 seconds at 50% power really helps to soften it up.

I actually prefer MMF over regular fondant. It seems to have much more elasticity and give.

I can cover a two layer 9" and 6" with one batch. I agree. Two batches should definitely do it.

The same amout of BC for both MMF and regular fondant. Just make sure it's smooth.

Two batches will be more than enough for your cake. I covered an 8" and 12" with one batch and had left over, so 2 batches will definitely work.

MMF can be tricky in regards to texture. I find that I need to omit a cup of sugar from the recipe and if I wait about an hour for it to sit I have the perfect consistancy.

Definitely do a practice cake if you have time so you know what you're dealing with. Aside from the clean up, I have nothing but good things to say about MMF.

Good Luck!!
Angie
