When making mmf can I use my Kitchenaid? I was reading the recipe for it that is posted on this site but it doesn't say anything about using the Kitchenaid. And if I can use it, which attachment do I put on it. I think it is time to break in the Kitchenaid since I haven't used it yet! lol

depends upon size of KA....

some have reported trouble w/ the smaller machines
and several say if you have the Pro 600 it should be okay

many say just do the goo and 1lb of sugar in KA then knead in rest by hand

in any event, use the dough hook.

I made mmf for the first time last week.

I agree with Doug, do the gooey stuff and the first bit of sugar, then switch to your hands, otherwise your kitchenaid sounds like it might die... I have the artisan mixer.

I make mine in my Artisan Kitchenaid. I use the dough hook and let it knead it until it's a nice ball of fondant. Then let it rest overnight it's perfect the next day without all the mess!

..if you use your mixer, make sure you lightly grease the inside of the bowl and the dough hook!

Thanks Mrs. Missey!! I'll remember to do that the next time I make it. I just made some about an hour ago and it stuck to the dough hook and the bowl. Another lesson learned. But overall I was happy with the way the fondant turned out. Now whether or not I will be happy with it after I take it out of the fridge and use it is another thing! icon_smile.gif I'm trying something daring for my Christmas Cake. Not sure if I can do it or not but I am going to give it my best try!!!

I always use my hands for the whole process b/c i'm afraid of breaking my mixture but it's really not that much work...i wouldnt risk busting the mixture for mmf
