Problem With Coloring Icing

Hi,

Every time I mix my colors, they seem blended, but when I come back the next day they have bloomed "polka dot" of color.

Also, even when making pastel colors, I am detecting an aftertaste.

I am using the Wilton Class Buttercream recipe for the icing and Wilton icing colors. Any advice would be appreciated.

I used to have that same problem when I used Wilton colors. Since I've started using Americolor, I've never had that problem again. Might be worth the investment to purchase some basic colors for the CC store!

Are you using all crisco? Sometimes color problems can happen with some generic brands of icing sugar. Sometimes salt granules or acids added can trigger color problems. Try dissolving your salt in your water content and mix it with the butter in the begginning. I personally use half crisco and half butter to my BC and skip the butter flavoring. I generallly use salted butter as it cuts the sweetness a little and sometimes add an 8th of a teasponn more salt at the end if it still seems a little too sweet. Colors will often change after sitting for a few hours and giving a it a quick stir will rejuvenate the texture and color.

I noticed the after taste as well in the wilton BC recipe. I dropped the Meringue Powder and the taste changes. icon_confused.gif
I tried making the BC frosting that is listed under the "Melvira Method" last night and I have to tell you... IT IS SOOOO YUMMY!!! icon_lol.gif

Hi,

I am using all Crisco, although I have used store brand powdered sugar. I'll try dissolving the salt as you mentioned.

Also, I think perhaps the Wilton colors may be a factor.
