...let your pans touch while they are in the oven baking. I call myself trying to speed up the process of baking cupcakes by baking 2 dozen at a time. The pans both fit on the top self of my oven but the two edges of the pan were touching. I didn't think it was a big deal. When they were done I took them out of the pan and low and behold the bottoms were black. My guess is by the pans touching it acted as a conductor. Lesson learned, sometimes when you try to take a shortcut it will bite you in the butt. LOL! I ended up having to start over. Oh well, at least I was the one who noticed it.

The old term "haste makes waste" is so true, huh? Well, I love the tip about turning them into cake truffles!

That happened to me but with two banana cakes. I put them in at the same time. One pan was a little bigger than the other...I too wanted to speed up the process. One loaf was burned on the bottom and the other was perfect. I guess we just learn.

I wish I would have thought to make some call balls but I threw them away after I saw they were burnt on the bottom. It is probably for the best though, I don't need all that temptation sitting in the house. LOL!

when you put pans in the oven, you must keep space around them so the hot air can circulate and cook your product.

was your heating element on the bottom of your oven? if so, it seems that that's where the concentration of hot air was , therefor cooking the bottoms faster and quicker.

That would explain it. My heating element is in the bottom of my oven.

I think this might have something to do with your oven. I bake two dozen cupcakes all the time and my pans do touch each other but i've never had this problem. Try checking your oven.

Maybe it's ok for the sides to touch, as long as the pans aren't too close to the sides of the oven, so hot air can still circulate?

That's exactly what it is, Sun, yes icon_smile.gif

I have several different sizes of sheet pans, one which BARELY fits in my oven. I only use it to bake chicken or fish on, NEVER cookies, etc. because air doesn't circulate at ALL around the damn thing. Having to turn the chicken or fish a half dozen times or more to make sure they bake evenly is a hassle (could you imagine it being necessary to do that with cookies? lol), so I use that pan only if my others are occupied.

Same goes for airbake cookie sheets. I had two in the oven one on the top and one on the the bottom. The racks were obviously not far enough apart since the bottom rack cookies were black 4 minutes into the baking time--the top ones were still raw! icon_cry.gif

Allowing for air circulation is vital but after reading some if the comments, I suspect that some of you desperately need an oven thermometer.

I should have been more specific to say that the racks were one right under another. I had to move the racks to allow more space then it was ok. I did check the temp when the incident occurred and it was fine. I assume that the top sheet was reflecting heat down onto the sheet below thus frying the cookies on the bottom sheet.

Birdgirl, I have had the same thing happen with the Airbakes, if the shelves are one above the other. I came to the same conclusion, that the shiny cookie sheet on top reflected the heat down, sort of like those tan intensifiers!

I always have an oven thermometer in my oven (and check it!), so I know that isn't a problem.
