I did a search and know the answer to what is the difference between gum paste and fondant, but when it says it dries faster - how much faster? I just tried to make a gum paste carnation with fondant and I got it to roll out thin enough, but it just didn't hold its shape. It just drooped into nothing. Is that what I am not getting - that it dries so fast it will hold that shape??

Maybe I will go and buy some gum paste so I know what I am supposed to be dealing with.

when rolled thinly, gumpaste sets in minutes. you need to give it time though for certin flowers and work in phases. for carnations, for example, I do bunches of them at a time, but only one layer a day.

when using fondant to make flowers you sgould add Gum tEX to your fondant. it will make it dry faster. I like to use both depents on what I am making
