Finishing A Dummy Cake

Does anyone have any tricks, instruction, or suggestions on how to spray a completed dummy cake? What is the best product to use. Do I also spray the the ribbon wrapped around the base of each tier, or put that on after I spray? The dummies are done in RI (didn't have any perma ice), and the roses are also done in RI. I'm not sure yet if I will do the leaves in royal or fondant. Either way, any info would be greatly appreciated. I'll post pics of my first dummy when it's complete.

What kind of spray are you talking about? Shellack or what?

She wants to know what to spray so it doesn't go bad and it's preserved in the window.

I did a wedding last summer and 3 tiers were styrofoam ... 3 tiers were real cake. I iced them in BC. I put the dummies in my display area. They are still sitting my display area and they look fine. I don't spray them with anything.

My biggest concern is being in Florida. It's always very humid here, and we have LOTS of bugs. I thought perhaps spraying it with something would help seal it.
