I am making a 7 tiered wedding cake as a final for my cake classes (not a wilton but one from our area) and I wanted to use this as an opportunity to try different flavors and fillings. I want to try the red velvet cake with mary kay icing & WASC, but I was wondering what are some of your favorite cakes and fillings/icings that you wouldn't mind if I tried. Cooked whipped icing is not great for decorating. It isn't firm enough. I would make another choice for a wedding cake, especially one with 7 layers. Good Luck in your class.
Chocolate cake with whipped chocolate ganache filling is my absolute fave. But I'm a choc-o-holic.
