There is a good recipe from Collette Peters on www.foodnetwork.com for a choc. coconut burbon cake

I also make a chocolate cake with carmel and heath filling covered in ganache and sprinkled with heath bits on top.

Thought I'd post again and tell you that if you go to recipezaar, baking911, recipegoldmine and martha stewarts website there are some great recipes there too. I belive it's martha's site that has the carmel apple cake.

I just made a cake for someone that was a hazelnut flavored cake. Just make a yellow cake and instead of using water use hazelnut liquid coffee creamer and add about 1/2 bag of mini-choc. chips and fold into the batter. bake and cool. Brush lightly with a hazelnut coffee syrup. I take Nutella (choc. hazelnut spread) and beat this until whipped. I use this for the filling. I cover with ganache and pipe designs on top and the sides. Chef Taz's recipe off of this site is the one I use. It works great for piping ganache and the dam you need when filling the cake too.
