Okay - I'm not the best decorator, as I don't practice much, and it's very much a hobby. However, I stopped by a very snooty market close to my home and they have a cake counter. It's a separate business and they obviously allow these folks to be part of the store. Well, I was in there two days ago and happened to check out the cakes (expensive cakes), and my oh! my - I could seriously do better. I couldn't believe my eyes. So, it's not just the Walmart's and discount clubs that have poor cakes, but you get what you pay for. But these were not CHEAP!
It always amazes me that whatever "IT" is, as long as it is upscale, exclusive, or pitched by someone famous, folks will pay out the nose for half a** products. BTW, I looked at your gallery, you do very nice work and this upscale snooty business could do well to have your cakes for sale.
It's not just this industry. My husband is a woodworker and spent some time having a booth for his hand-crafted furniture in craft shows. We saw a sign in one booth that we just LUV'D......!!

I'd say in this case, "Don't mistake 'expensive' for 'valuable'!"
I have noticed the same thing. I agreed to make my daughter's wedding cake and then suddenly freaked at the idea. She took me to one of those huge wedding exhibitions and let me look and taste all the samples from the gourmet bakeries selling expensive cakes for weddings. I walked away completely convinced that I could make her cake, because all my cakes tasted better than the samples and I'm not even as good a baker as many of you are!
