Help anyone!

I made a strawberry cake for a customer and the entire cake sunk inward. It looks like someone placed a ball on top of the cake. I need a really good strawberry cake recipe using a white cake mix ASAP. I have to redo this cake in the next two hours before my customer goes out of town.

The recipe I used before is as follows:

box of white cake mix
box of strawberry gelatin
2/3 cup oil
1/2 cup of strawberries
3 eggs

I need a recipe that will not sink in. Can anyone help?

Hi

I found this for you I hope it helps - - Its from Southern Livings -- Secrets from the Cake Mix Doctor. I only bake from scratch so I haven't made it myself, but I wanted to find something since you are in a rush!

Berta

1 (18.25-ounce) package white cake mix

1 (3-ounce) package strawberry gelatin

4 large eggs

½ cup sugar

¼ cup all-purpose flour

½ cup finely chopped fresh strawberries

1 cup vegetable oil

½ cup milk

BEAT cake mix and all ingredients at low speed with an electric mixer 1 minute. Scrape down sides, and beat at medium speed 2 more minutes, stopping to scrape down sides, if needed. (Strawberries should be well blended into batter.)

POUR batter into 3 greased and floured 9-inch cakepans.

BAKE at 350° for 23 minutes or until cakes spring back when lightly pressed with a finger.

COOL in pans on wire racks for 10 minutes. Remove from pans; cool completely on wire racks.

BTW, Once my cake sunk in the middle and the cause was that I had forgotten to check it and it was not done enough in the middle. Stick a flower nail in the center of the pan and bake at 325 for a bit longer and that will help as well. If you don't have a nail handy, at least reduce your temp.

HTH,
Berta
