Mmf & Ice Cream Cake

I have a request for an ice cream cake in the shape of a shopping bag. I have a great idea and I know what I want it to look like, but here is my question. When making MMF the directions say not to freeze. If I use MMF on my ice cream cake and then freeze it is this going to be a big mistake? If so, what happens?

I dont think that will work, the moisture from the freezing will make the fondant really soggy and shiny when you take it out...I made that mistake once..I didnt like it...

Hmmm...well, I am going to have to think about that. It is a shopping bag, so maybe a little shine won't detract too much. Right now I am experimenting. I put a little MMF wrapped in saran wrap and a little w/o in the freezer. I am going to leave if for about an hour and then bring it out to see what happens to each.

Also, I have to mention, that our temp is not expected to get above 20 degrees the rest of the week, so it is very dry here. I don't think my cake will sweat much as it warms up.

Okay, here are the results of my experiment. The MMF in the plastic wrap came out shiney and felt a little soggyin my mouth, but the MMF that I did not cover came out nicely. There was no moisture and the texture felt the same in my mouth. The only down fall is that it was not wrapped around a cake. That may effect my results.

I would try making a few individual cakes with the icecream and try putting it in the freezer just like you did with and w/o the seran wrap. From that you should be able to get the true results.
