I am planning on make cinn swirl cake today and was thinking of putting cheesecake mousse in the middle (found on recipe page) my question is when I put the top layer on will the mousse ooze out? sould I put a ring of frosting as "walls?"on the bottom layer?
Or do you have any other suggestions as to what to put in the middle.
I a doing a creamcheese frosting.
MJJANDZ: Yes, you'll definitely want to put a "dam" around any filling you use. What I do is just leave a decorating tip off the coupler and use the coupler as the "tip.''
Start about 3/4 inch inside the rim of your bottom cake, and make a complete circle (or square if that's the shape of your cake). Fill inside the dam, trying not to get more filling than the top of your dam. Place the next cake on and press down slightly. Give it a while to "rest." That's to help prevent the "bulge".
After it's rested for about 30 minutes, go ahead and frost!

here is what I cam up with.
I whipped cream cheese and x-sugar and vanilla. Then in a different bowl I whipped heavy cream and added some more x-sugar. Then I folded the whipped cream into the cream cheese mixture. Taste very yummy!! It is in the refrig along the cake. I will make the creamcheese frosting later.
