I found chocolate mint pudding marked down at the grocery last week and thought, wow, how'd I never see this before (I always find good stuff when it's on clearance and never to be found again!), and then thought what could I do to a chocolate cake w/ this?!

And then today I found mint chocolate chip BC icing at Big Lots...and it is delish...my fave canned icing to just eat w/ a spoon!!!

So what are your suggestions for a combo here? I thought about just dr'ing a choc cake w/ the pudding, and maybe a light filing of some sort then iced w/ the BC icing? The icing isn't a really strong mint, not sure about the pudding. Any other ideas? It will be just for family, since I am not doing anymore cakes this month, so it doesn't have to be anything fancy or outrageous, we just all really like mint & chocolate together--almost as much as peanut butter & chocolate!!!

How about a varietion of the below recipe but instead using chocolate cake mix (omiting the green food coloring) and using the chocolate mint pudding instead of the white chocolate.

Chocolate Chip Mint Cake

1 box Cake Mix - White
1 pkg pudding White Chocolate
1 c water
2 T oil
4 large eggs
2 T cream de menthe
½ t pepperment extract
3 drops green food coloring
½ c chocolate chips

Mix as you would any doctored cake. Wet ingredients then add dry. Mix for 2 ½ mins. Pour into prepared pan(s). Sprinkle chocolate chips over batter and bake.
