I have been working on a cake with melted white chocolate and milk chocolate (looks like marbled) and everyone says that it tastes great, that they have never had anything like it, and is really moist but it keeps falling apart every time it gets cut. I have tried a couple of variations to the recipe but I can't seem to get it to stop. It is fine when it comes out of the pan, when they get stacked and when the get iced but as soon as a knife is inserted to cut it, it just falls apart. I even made my DH sharpen all of my knives to make sure that it wasn't because of a dull knife. Someone PLEASE help me. icon_cry.gif

Sorry to hear that about your cake. It sounds like the chocolate is hardening and tearing up your cake. You can also try warming your knife in hot water and wiping with a towel before you cut the cake. You could also could try ganache or a denser cake like pound cake. Good Luck! Maybe someone else has some other ideas.

i've also encountered the same problem before with my chocolate cake, after putting the cake in the refrigerator before serving made it better.

try to put water at the lowest part of your oven to retain the moisture of your cake, maybe it can help a little, if not, bump!

I will try the warm water on the knife and putting it in the refrigerator thank you for that. The problem is not it being moist, the chocolate seemed to make it more moist, maybe it is just too moist.

UUUGGGGHHHHH!!!!!!!!
