Does it need to breathe? Is the fondant suppose to harden?
Or, should I keep it air tight so the fondant will stay softer?
Would keeping it airtight make the cake mold?

Interesting questions and I wish I knew the answers but I have never even had those cross my mind. I guess it depends on how long you were keeping the cake. Fondant usually stays soft for about 2 days and then starts to get quite hard. Covering it would slow down the hardening of it. The cake probably wouldn't mold before people ate it unless it was past a week. These are just educated guesses however so BUMP and maybe someone else knows the answers.
Take care!

Hi,
I store my fondant covered fruitcakes in a closed cupboard ( sometimes in a box as well ) and they basically last for years ,as long as humidity doesn't affect them. I have had a choc.mud cake covered in fondant which lasted a few months - just kept in the cupboard - and it didn't dry much or go mouldy ( sorry this is so long !! ) I don't know about butter cakes & such...sooo probably not too helpful !! icon_biggrin.gif
I guess it all depends on what type of cake you're covering ?

Anyone else?
In general, like a regular chocolate cake covered in fondant, do you keep them airtight? Or, is the fondant suppose to harden?

When you cover a cake with fondant, I've found it invariably keeps the cake moist, but you have to be careful if doesn't grow mold inside. I've found I can keep a fondant covered cake for 3 to 4 days in a cake box. I don't cover it in plastic wrap or a plastic container, otherwise it can sweat.

i don't cover it with anything other than a cake box to keep dirt out.

I don't store cakes though. This is just to make them and be eaten a few days later.
