Freezing Cakes

I have been putting my 8 inch cakes in large freezer zip lock bags to freeze them. I would like to start freezing my larger cakes, sheet cakes, etc. What is the best procedure for freezing large cakes? Do you wrap them in freezer wrap? Alum foil? both? How long do you think a cake can stay in the freezer?

I froze my daughter's wedding cake and it came it great! Just wrap it up tightly in saran (several layers) and then aluminum foil (twice). It was only frozen for several days but when it was thawed to be iced, it was great and everyone raved over how moist it was.

I wrap mine in foil and then put them in the large zipper type bags. Hefty makes a zipper bag that holds an 11 x 15 cake perfectly!!

Begin by wrapping it in plastic maybe twice or three times. Then wrap with a good amount of foil, sealing every corner. This is how things were cater wrapped when I worked for a catering company. Careful not to smash. icon_biggrin.gif
