How long does everyone wait b/w the crumb coat and applying the fondant. Someone told me to wait at least a day but then I had problems getting it to stick. Do I apply before the icing really sets up? Any ideas?

I use fondant everyday at work and here's what I do. You crumb coat the cake , chill , then ice it again . Chill again till the BC is cold and firm. Then add the fondant. After smoothing ,you can then take your fondant smoothers and smooth the sides as you turn your turntable. The chilled cake gives you something firm to work against.

You don't have to wait.

I alway put a layer of BC under my fondant, not just the crumb coat. I don't really wait any to put my fondant on either. I am sure of the stability of my dam and I don't want to age my cake any more than I have to. If your fondant doesn't stick to your BC, either apply it to fresh BC, spritz the BC with water, or brush with watered down piping gel.

Thanks. That seems to make much more sense than what I was doing. I am going to try it out right now.
