I made icing today and the constistency was more whipped than usual. It was a yucky, rainy day and I think that could have something to do with it. It was hard to work with because of it's consistency and I didn't do anything differently. Is this common for the weather to affect the icing in that way?

Not only will humidity and temperature have an effect on your icing, it can effect your baking time, also. A very humid day, in a damp apartment like mine, can increase my baking time by up to 30 minutes, depending upon the size of the cake I am baking.

If you are experiencing humid weather, and you are making basic American Buttercream, or royal icing, you can increase the amount of powdered sugar or decrease slightly the amount of liquid you use to process. I have been told that adding a slight touch more meringue powder can make your icing stiffer, also, but I do not use meringue powder, so I cannot verify this.
