what does baking on a lower oven temperature for a longer period of time do for a cake? does it cause the cake to bake more evenly?

That's the idea. Some also say it helps with not getting that huge mountain of cake in the middle of the pan too. I could argue that one. thumbs_up.gif

As a rule, I do not deviate from established baking times. For me, the problem with a lower temp for a longer period of time is that the cake dries out and does not remain moist. This is my experience and there may be more advanced bakers that have experimented successfully with these two variables.

The only time I bake at a lower temp. is when I do 12" or larger. I do use a flower nail as a heating core and I have better evenly baked cakes because of it. Again, I only do this with larger cakes. Hope this helps.

um...I bake all my cakes at 325...period. I've not had a problem with dried out cakes. I still set the timer to the amount of time noted on a recipe and that is the time at which I begin checking for doneness.

I bake at 315. The entire cake stays moist this way, as the edges don't get done before the middle. I have NEVER had a cake that is too dry. (I use box mixes.)

Wow -- so many of you successfully lower the oven temp. I am going to get myself another oven themometer to check my oven temp is whacked.

I always bake cakes at 325 I find they bake evener and are very moist but if you bake at too low of a temp especially a large cake it tends to get rather dense

An oven thermometer is a good idea to know how accurate YOUR oven is.
