Ok, I get a call from LATINA magazine in NY asking me if I do QUINCEANERA cakes..so I said sure..thinking...like a goof that they are doing a piece and that I could get a small blurb.

Noooooooooo

they are having a FREE event by INVITE only and are asking me if I Want a 10x10 booth at this event!!

They said about 500 people would be parading through...

Oh GREAT!! This is WONDERFUL...when is it? I cautiously asked..Oh..it's on the 25th..I get all excited because I'm thinking..I have a month to prepare..I have some FABU ideas for some Themed tired cakes that I can then exhibit at some art show and give some to the Hotel that is now doing Weddings.

I figured this will put the fire under my feet...

Ok, sure..I'd love to participate!

Good, she tells me....I will send you the packet and see you there This SUNDAY!

I'm good..but...NOT THAT GOOD...I haven't a clue how I'm going to do, display cakes...that I need to order styro for...AND samples for 500 people...I don't even have any business cards that don't have the risque website..my tired cakes are a lot outdated, and I have a few orders for the end of the month too.

I have no idea if there are going to be other bakeries there eighter...

I do want to participate sooooooooooooo bad that my back teeth hurt..after the Channel 7 fiasco!

ok...re cards: quick trip to Sam's Club (you do have a membership right?) for the 1,000 card box of print then yourself business cards and extra ink cartridges (unless you have CartridgeWorld or similar near by)....then set up a nice basic card (scan you current one and use paint to erase the risque website and then add a diff one or leave blank!) --- oh and should you make a batch all in Spanish or even most of them? the cards can print while you bake.

as for 500 samples -- well that could be sheet cakes or 500 MINI-cupcakes w/ a dollop of frosting. -- easy to get multiple flavors -- OOOO...could even have a "make your own combo bar -- unfrosted mini's and icing in separate container so they can frost themselves (the cupcakes!!!)

tho' I've often wondered....what does it say that so many displays like this use dummies...which behave themselves ever so well -- no slumping, breaking apart etc.

what would it say if it were a REAL tier or several tiered cakes and you actually cut them up to serve? (i know I know...damaging the art -- the display)

Come on Risque!! You can pull this off if anyone can. Yes you will be exhausted when it is over, but think about the potential $$$$$$. YOU CAN DO IT!!

ok...just had a totally left field thought...

if doing the mini-cupcakes....

make and take batter and a small countertop oven and bake fresh there?

gee--- could even make small batches of fresh frosting...

talk about pulling then in with the smell!!!

Alright Risque, you can do this! The mini cupcakes are the easiest! I did them for the bridal show this past Sunday. If you have three racks you can bake 144 at a time, put them in 2oz souffle cups, squirt a glob on top and put the lid on (it squishes the icing anyway) and pile them in a large bin. I made 500 in just a few hours! You can do it!

As for the dummie cakes... I wanted to take 5 but only got 3 done...worked out fine! Soak your old ones in water to get the icing off and reuse the styrofoam. Takes only a few minutes.

Take Doug's advice on the business cards! Great thinking! thumbs_up.gif

Pack your s$it up and hit the road! It'll be worth it when it's all over! thumbs_up.gif

Then do what I did...cry and go to the day spa!

I think you can do it!!! Those little paper medicine cup holders that people do cupcakes in now work fantastic...you can put sooo many in the oven. I cooked over 24 cupcakes (full-size) in my regular oven on one shelf last evening using them! Just put them on a cookie sheet..~20-22 minutes/batch. They also are easy to transport because the cups are firm.

Perhaps something like that...you will come up with something!!!

See if anyone can help you out getting things ready..especially making your business cards

I did the 600 samples in one day at my friends Bakery plant..I got those mini cupcake papers and 4 of the mini cupcake pans that make like 2 dozen at a time...I can do those on Saturday night and pack them up and have them ready to go ( or go in Sunday am..)

I've purchased the smallest styro cups that have lids and I put the little cupcakes inside with a little squirt of icing.

so that's doable.

I don't want to make real tired cakes to cut up cox that gets real messy real fast.

I figured I can do 3 themed tired cakes ( no I don't have any dummies at the store ) I meant that my pictures are outdated.

but, because Janurary was such a sucky month I don't have the extra money to get all the extra stuff that I need.

The Quinceanera Fair is free, but it's going to cost me just as much as if was a paid event..

The cards in Spanish...GOOD IDEA!!!!!!!!!!


but, Wednesday..tomorrow..my day is cut in 1/2 already I have to go and support a dear friend at court...at 5 AM in the morning...I don't know why we have to be there at 5 am...but, as a good friend I will be there...buuuuuuuuuuuuuuut...there better NOT be any drama...coz Momma AIN'T going there..lol

so..I have 3 days to pull this off!

I'd better make sure that I do some POWER SHOPPING lol

oh yeah and take time to get my mani, pedi and hair done! icon_lol.gif

noooooooooo baby, you MUST look as fabu as your cakes! you're not only selling flavor , art but yourself!

I am reconnecting with my personal trainer/guy to work off the 5 size gain from culinary school, by the time I get back into my skinny jeans...they will be as out dated as my wedding cake pictures..lol

I want to be the one teetering around in stiletto heels and pink chef coat, giving the "AGEIST" professors and school the "BRONX CHEER"..lol

ok, 9 am wednesday..I was back from the court thing with my friend by 7:30 am...took a nap, getting back out there.

Game Plan.

I already have one of the cakes I need for the weekend baked. Go to supply store and get enough styrofoam for 3 dummies. I'm not going to make them HUGELY tall.

I'm going to make one "romantic" one comical and the other..whatever comes to mind..lol

I'm going to get ink and printer lables to do my little cups, I MAY wrap them in pink ribbon and tie the fork and napkin to the top.

well, theres more..I guess I'll take pics and post when Im done and there.

Wish me luck...!
