Does anyone have a good pineapple filling that they use?? I am getting ready to do a cake and the bride has requested pineapple filling. I am having alot of trouble finding one that doesn't take forever to make, or cost a fortune!

I have even considered using my own apricot pineapple preserves that I already have on hand, that I canned myself last year. What do you think????

Go for your own! Do you have time to have the bride taste test? I bet she will love it!

She already did that in December. And they loved it! Your right...I think I will do that!! It will probably save me about $50 in the end........and considering I really gave her a steal of a deal(a $1500.00 cake for half) I think they will be ok with it.
