I have three dozen cupcakes due for a baby shower on Saturday. I've already baked, wrapped and frozen the cupcakes. I have the afternoon off work tomorrow (Wednesday) and would love to get the decorating overwith! Do you think it would be ok to go ahead and do it, then freeze again? or refrigerate? ...or you wouldn't do it. I have little ones so I was trying to find some time when they'll be out of the house! icon_smile.gif TIA

I would not re-freeze the cupcakes. Maybe just refridgerate???

I wouldn't refreeze either. I probably would probably do all the preliminary work and setup with the icing and then decorate them all on Friday nite. Perhaps you could take one out let it thaw, refreeze, and let it thaw again as a test to see how the refreezing comes out. They thaw really quickly. Good luck!

I agree also. Don't refreeze. Refrigerate them after you decorate.
