when dr-ing up a box cake mix do you use a cake extender? or do you use milk or creamer for the water, butter for the oil and an extra egg? or both?
I am going to try my first cake with cinn vanilla creamer and use cinn swirl box cake, and I am going to add some of the creamer to the cream cheese frosting.
The biggest thing to watch with doctoring a mix is not to add too much fat. The cake won't rise or will sink terribly. It's really a trial and error to know how far you can push a particular recipe. My poor dh says the extra weight he carries is proof of all my experiments! ![]()
I use the cake mix extender but I also add a box of pudding and TBS of merengue powder it comes out awesome... and I am not a cake eater but I like my cake. ![]()

I sometimes use the cake mix extender recipe here on CC. Other times, I add a box of instant pudding and an extra egg. I ALWAYS use milk or creamer instead of water. I have never substituted butter for the oil, but I always overpour the oil a tiny bit.
I made an AMAZING cake yesterday. I added a box of instant pudding, and a jar of baby fruit. It was sooooo good!!!!
