Wow!
The French pastry chef's wife just came to my home today, for our first real meeting. I gave her a list of what I can do, with my prices, we exchanged a few tips about business (she's not aware of all the taxes and other things), she gave me also ideas about other kind of cookies that might be good to sell...
They're opening on March 2nd (unless something happens
) they were supposed to open on Feb 23rd... anyways.. so we talked about what they wanted me to bake for the grand opening. She wants 1 order of everything
to be picked up the day before, and pies and donuts fresh from the opening day!!! Her husband his going to come by on Friday of this week to give me a deposit of 300$ to buy my supplies!!!
After that we'll see what sells more, and she'll call everyday to order things for the bakery!

I was going to some workshops about business, to learn how to make your business grow, how to start, and so on... the last one I attended, this couple was there. The person giving the workshop, asked everyone to state their name and business. So this couple said they were opening a bakery, a French bakery. At the break I went to talk to them (thinking they could be my competition) and they were so happy to talk to me. They were searching for someone to bake their cakes and other pastries that are non-French. So all the cookies, brownies, doughnuts and all those things I'm the one to do them!!! And he said that later on, when we're all settled and everything is going well (about 2 years) he'll take me as an apprentice to learn French pastry. He said that made him decide this is that he saw my portfolio, and I'm self taught, so he sees a potential for learning in me! He said I have potential
I'm so happy!
And when someone comes to their bakery and ask for them to make a special cake (birthday, wedding...) he'll hand up my card so the customer will order direct from me! ![]()

I am so very jealous. You are going to be getting quite an education without having to go to a formal school for it; just like the apprenticeships of old, to learn at the knee of the master. I am so very happy for you ... as proud of you as if you were one of my own! So nice to have someone who is of his position tell you that he "sees a potential for learning in" you. That is just really stupendous!
