Honey Cakes Icing Help....

I'm making Honey cake right now and need help with icing. My recipe says just sprinkle with powdered sugar but i need a good icing instead. My oven is horribly unleveled and the temps. are way off so everything is really browned & needs a lot of trimming. icon_mad.gificon_mad.gificon_mad.gif What do you think would be a good icing?? Im trying to keep it light.

Also, if I used royal icing (it would be my first time) would the filling layers be hard? I see everyone say that it dries quickly & is bone dryI wouldnt want it to be like that between layers. icon_confused.gif TIA.

You know, honey browns a lot more than other sugars, maybe that's why it's so dark.

I would not recommend royal icing, it will get very hard. Why not try a whipped icing or just a glaze? There are several whipped icing recipes here on CC.

You could spread carmel on it, to keep with the honey/sugar flavor.

Powdered sugar is what's expected/traditional. A glaze would be nice as well.

There are many great uses for buttercream and fondant but a honey cake is not one of them.
