I am making homemade hot chocolate mix and putting them in icing bags to give as gifts this Christmas. Was wanting to put different things on top besides just marshmallows.

Does anyone have any good recipies for peppermint bark. How do you make it? Or any other barks? The Crate and Barrel holiday magazine has an oreo bark that looks yummy....

I would too like to know all the different kinds of bark that everyone makes. I know that it is very easy, to make.

Thanks for the recipie. That does sound pretty easy.

Does anyone else have any good Bark recipies??? Should I use Almond Bark choc. or choc. chips? Is there much difference in taste between the two?

Sorry all the questions. icon_smile.gif I am so ready to start baking. We are getting our countertop cut at the moment so not only do I not have an oven, I dont have a kitchen sink. It is driving me crazy. Plus we are painting the kitchen. I don't know what my husband and I were thinking doing all this before the holidays. Hopefully he comes home with the counter tonight. You never know how much you use the kitchen sink until you dont have one!! icon_lol.gif

Almond Bark has a sweeter taste than semi-sweet chocolate chips.

Here is the recipie I use:

Crushed candy canes, to yield 1 cup
2 pounds white chocolate
Peppermint flavorings, optional

Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)

Just noticed this thread....You can use the white or brown chocolate bark and add just about anything you want to it....The combinations are endless....The easiest way to do it is to melt the bark in a pyrex bowl in the microwave for 2 mins, stir, then nuke in 20 sec increments until it is completely melted. Then stir in just about anything your heart desires and pour onto wax paper lined cookie sheet and chill till set. Then break it into pieces....

Last year I got a recipe that is basically the Chex mix, the cereals, nuts, pretzels (but not the seasonings)...pretty much whatever you wanted to put in, but you melt white almond bark and mix it all up and spread on a cookie sheet with waxed paper to set up. It was really good, everybody loved it. I put it in pretty Christmas plastic bags and gave it to neighbors, postman, etc. Janice

To go with hot chocolate:

* marshmallows (of course ... but you could make your own for something different...)

* cinnamon stix
* biscotti (great for dipping into the hot chocolate!)
* meringue snowmen (someone posted instructions here recently, but you wouldn't need to hollow & fill them... just decorate them to look like snowmen!)

I make a peppermint bark by layering a dark chocolate with a white chocolate and crushed cancycanes. It is so easy! just melt some semi-sweet chocolate chips spread ina cookie sheet and let cool. Melt white chocolate and spread on top. While it is still warm press crushed candy cane pieces all over the top. If you want a really nice finish on top, drop a few droplets of red food coloring here and there and swirl with a toothpick. You can also add peppermint extract into the melted white chocolate for more peppermint flavor.

I make mine similarly. I melt white almond bark and in a separate bowl chocolate bark. Then, I mix crushed candy canes into the white and dollop it on wax lined cookie sheet and dollop the chocolate between. Then a take a knife and swirl it thru both and it makes a really pretty marbled design. Looks and tastes great.
I don't even measure, just use what looks like about what I want. I did 2 cookie sheets of this yesterday in about 10 mins.

Thanks for the swirled peppermint bark idea. I didn't care for the chocolate bark so the swirl sounds like a good way to use it up.
