i typically do two 2 inch layers. depending on how much filling you include it could be 4-5 inches high. i used to do one 3 inch, but they really look too short to me. so i switched!
I use 2" pans and try to get the cake to rise all the way up. So I have the 2 2" tall cakes. When I'm feeling ambitious, I torte each one and end up with 4 layers. These usualy reach close to 5" tall, which I really like.
When I just want to get to decorating, I just fill in between the two layers, these usually end up 4 to 4.5" depending on how successful the cake baked! ![]()
i use 3" pans for sheet cakes, torted only when requested. and 2 2" layers sometimes torted for special cakes
All my cakes are at least 3 layers (with 2 layers of filling) and 4 layers (with 3 layers of filling) for wedding and some party cakes. Finished cakes are anywhere from 3 1/2 - 5 inches tall.
