Hey friends!
I made the Wilton gumpaste recipe at home last week, everything looks perfect except for when I pull off a little ball to use, it's too sticky. I've needed at least an additional cup powdered sugar into it, then the outside is all nice and soft, but the minute you tear off a piece, the stickiness is back! So it's the right texture on the outside, just not on the inside...
I tried to make a little ball so I could make a flower but when I try to start shaping it, it won't hold its shape and here comes the stickiness!
Should I add some cornstarch to it? I've had it in a freezer bag all this time, should I put it in the fridge?
Thank you!

I would NOT add more cornstarch or sugar. Pinch off a good-sized piece, then dip your fingers into some Crisco and take about a teaspoon in your fingers. Knead this into the gumpaste. You will be AMAZED at how well it works. I learned this at the Wilton Master Decorator Class in Chicago last November. I used to HATE working with gumpaste and now I love it! YOu can also do this with fondant. We were taught to add a small amount of Crisco everytime we re-opened the bag of fondant or gumpaste to work with it again.

I even find the prepackaged gumpaste too sticky and, as the previous post mentioned, use shortening - works great!

If you make the gumpaste yourself, you need to let it sit for 24 hours. then you work it. you might need to add more conf sugar if sticky and if it gets alittle brittle, add more short.

And if you get too frustrated with that recipe, try Nic Lodge's, I think you will really like working with it.

thanks friends! I'll try the shortening.
I really like how easy this was to make, if the shortening doesn't work, my next recipe is the Nic Lodge one.

One tip or shortcut I will give you on Nic's recipe. Instead of kneading in the shortening by hand, I leave the gumpaste in the KA mixer, switch to the dough hook, add the shortening and turn on to low speed till it's well combined.
