I have been asked to make a display cake for a charity event. How long does fondant last? In other words, how far in advance can I make the display cake?

I have one displayed that I made 6 months ago-it still looks great! HTH

Ditto to the above. As a matter of policy in our store we make new display cakes every 3 months and that mainly is because the sun fades the color out of them. The store lights do it too! So I would keep it in a cool dry dark place until your ready to display it.

Epi - are you one of the store's decorators? . . . I might be mixing people up, but I thought I saw a post where you said you were a guy (apologies if I'm remembering incorrectly). But on the website you list it says the owner is a woman (anne).
