I have been asked to make a display cake for a charity event. How long does fondant last? In other words, how far in advance can I make the display cake?

Ditto to the above. As a matter of policy in our store we make new display cakes every 3 months and that mainly is because the sun fades the color out of them. The store lights do it too! So I would keep it in a cool dry dark place until your ready to display it.

That's great that it will last that long. I wasn't sure. That'll certainly make my life much easier. Thanks for the replies.
