I want to make a slab rectangular cake for my sisters birthday and again for an Avon meeting coming up in March. I'm not going to be filling it or anything...but I just don't know how many box mixes I should use. The cake pan is 11 x 15. I would like a decent height to the cake but not to over-do it either I suppose. Maybe 2 boxes???

Also, when icing a slab cake like this, is there a need for cutting off the top or turning it upside down? Can I just frost it even if it does have a rounded top on it??? or would it look better flatter? Do you turn it upside down if you do cut the top off?

So many questions, so little time.... icon_confused.gif

I always trim the top of all of my cakes for a smooth even surface.

I always trim. Always. 11x15, I use 2 mixes. 12x18, I use 3. If you use the baking strips, this will help it bake even (less trimming). Also if you grease-only the pan (no flour) the cake will rise higher.

I use 2 mixes for 11x15 and bake it at 325. Once I pull the cake from the oven, I take a towel and press down on the cake (tip I found on cc and it works great for single layer cakes). Then, I flip it onto my cake board. I always turn my cakes upside down to ice.
